2021 ALICE LESTRANGE WILD SERGIO PAIS
Perfect for those who love earthy, herbaceous flavours with a little bit of wildness. Hints of tart cranberry and raspberry when you take a sip, and as you let it breathe, the fruity flavors will become more prominent.The tannins will also become more chalky and add some structure to the wine. There's also a unique bretty note that really enhances the overall flavor profile.

Vineyard: 100% País, Chorrillos, Itata, chemical-free, no-till
150yr old, unirrigated bush vines. Chemical-free farming. South and SE facing no-till slopes. País struggles to ripen here because of the exposition and natural competition with the grass. This is a very savoury, herbaceous expression of the varietal. Low alcohol because of the cool climate (not an early pick).
2/3 of the grapes were fully destemmed using the zaranda (hand destemming using a screen of wooden poles), leaving a lot of whole berries, pressed at dry after 4 weeks. 1/3 is saignée free-run. The wine sat sous voile for 10 months before just one racking and bottling with no adds. It is a wild hands-off wine, to respect the hands-off nature of the viticulture.
Savoury and earthy, herbaceous, just underripe crunchy red fruits: cranberry, raspberry. With air more fruit character appears and soft tannins become more chalky and present. There's a wild bretty note that compliments the fruit character. Chilled red with backbone.
